I spoke to an accountant about this, and was told that because my business has very few physical assets that it would be justifiable and easy to register anywhere, within reason. The company would pay tax in whatever country it is registered, and I would pay tax on my salary as director of the company in whatever country I am living.
My general plan over the next few months is to get a company registered in a country with "suitable" corporation and sales tax, and to also move somewhere myself which has a lower income tax rate – 50% above 40k in Ireland ain’t no fun.
I’ve tried to do some research on this topic but I’m struggling to find useful information. I’m thinking myself of moving to the Czech republic in January – very low income tax rate, pretty close to home, fairly nice, and cheap. As for where to register a company I have no idea at all.

Or Bulgaria. They have a 10% company tax and 5% divident tax. But then you can only get your funds out once a year.
If you pay yourself monthly there is a 10% incometax, so still very reasonable compared to western european companies.
Keep in mind that a lot of countries look at where the work is actually performed even if the company is outside of their borders, and you might get taxed accordingly in the country where you are living.

I don’t know anything about taxes in Ireland, but in the US it can be difficult to register a business somewhere that you don’t live. Don’t get me wrong, people do it all the time but there is some risk with it. The best advice I can give you is to speak with 2-3 tax professionals before doing anything. Don’t go with the one who tells you what you want to hear (or the one who promises you’ll pay the least taxes) but the one who is realistic. You can also ask each one questions based on what info you got from the others.
